Understanding the FOG Discharge Operating Permit
The Grease Discharge Operating Permit (GDO), issued by the Department of Environmental Resource Management (DERM), is required for all food service establishments, including:

- Coffee shops
- Juice bars
Key requirements include:
- A properly installed and maintained grease trap or interceptor
- Routine cleaning at the frequency specified in your GDO
- Use of a licensed hauler for waste removal (DERM decal required)
- No skimming, decanting, or reintroducing waste into the system
- Mandatory reporting of each cleaning via the county’s online portal (effective since January 2017)
Failure to comply may result in citations, fines, or other enforcement actions.
