Understanding the FOG Discharge Operating Permit

The Grease Discharge Operating Permit (GDO), issued by the Department of Environmental Resource Management (DERM), is required for all food service establishments, including:

• Coffee shops
• Juice bars

Key requirements include:

• A properly installed and maintained grease trap or interceptor
• Routine cleaning at the frequency specified in your GDO
• Use of a licensed hauler for waste removal (DERM decal required)
• No skimming, decanting, or reintroducing waste into the system
• Mandatory reporting of each cleaning via the county’s online portal (effective since January 2017)

Failure to comply may result in citations, fines, or other enforcement actions.
